Loaded Bacon Cheeseburger Soup

This delicious Loaded Bacon Cheeseburger Soup is the perfect soup for any time of year. It is so filling, and the flavor is unmatched. As someone who absolutely LOVES soup, I can remember the first time that I had this particular soup, so that in itself is saying something. I was maybe 10 years old, and my mama made it for supper one night. I can vividly remember how yummy it was and how I would always ask her to make it again. So needless to say, I have been eating and making this soup for a while. I have tweaked the recipe here and there and I think I finally have perfected it. So, let’s get down to the details!  

  How To Make Loaded Bacon Cheeseburger Soup 

Start by adding the chopped bacon to a large pot over medium-high heat. You will need to occasionally stir the bacon to ensure all sides cook evenly. When it is almost finished cooking, you will add the diced yellow onion, sliced celery, and sliced mushroom to the pot. Stir to combine the vegetables with the bacon pieces and allow to cook until the vegetables start to soften, and the bacon is fully cooked. I choose to sauté the vegetables with the bacon because the grease adds so much flavor to the vegetables. Once the bacon is fully cooked and the vegetables are soft, remove everything from the pot and set aside. 

Next, add the ground beef to the pot and cook until it is fully browned, and no pink is visible in the meat. Now you will need to drain the grease from the meat and add everything, (the ground beef, bacon, and sauteed vegetables) back into the pot. Some people may choose not to drain the grease, however, when making soup it is important because the grease will rise to the top which adds no extra flavor to the soup. Next, add the chicken stock and stir to combine. Over medium heat bring the soup to a boil and add the diced potatoes. You will need to cook the potatoes until they are fork-tender, which means that they are done when a fork can easily slide into the potato. Now add heavy whipping cream and the Velveeta cubes, reduce the heat to low, and stir occasionally. Make sure that you don’t skip over the step of cubing the Velveeta because it will take a month of Sundays to melt if you were to add the whole block to the soup.

 Make The Roux

 While the cheese is melting, you will need to make a roux to thicken the soup. So, in a small pot over low-medium heat add the butter and allow it to melt. Once it’s melted add the flour and stir it constantly, allowing it to cook for 2-3 minutes until it is bubbly. Now add this to the pot of soup and stir to combine until all the Velveeta has melted and the soup has thickened. Ingredients

  • 1.5 pounds ground beef
  • 6 slices bacon chopped into small pieces
  • 16 ounces Velveeta cheese diced into small cubes
  • 4 cups chicken stock
  • 2 large russet potatoes peeled and diced
  • 2 cups heavy whipping cream
  • ½ yellow onion diced
  • 2 stalks celery thinly sliced
  • 1 cup baby bella mushrooms thinly sliced
  • 4 tablespoons butter
  • ¼ cup all-purpose flour

Instructions

  • In a large pot over medium- high heat add the chopped bacon, occasionally stirring until it is almost finished cooking. Add the diced onion, celery and mushroom, stir to combine with the bacon pieces and allow to cook until the vegetables start to soften, and the bacon is fully cooked. Remove from the pot and set aside.
  • Add the ground beef to the pot and cook until it is fully browned, and no pink is visible. Drain the grease and add the ground beef, bacon and sauteed vegetables back into the pot. Add chicken stock and stir to combine. Over medium heat, bring to a boil and add the potatoes. Cook the potatoes until they are fork tender. Add heavy whipping cream and the Velveeta cubes, reduce heat to low and stir occasionally.
  • In a small pot add butter and allow it to melt. Once melted add flour and stir constantly, allowing to cook for 2-3 minutes until it is bubbly. Add this mixture to the pot of soup and stir to combine until all the Velveeta has melted and the soup has thickened. Serve & Enjoy!
