This Dill Pickle Chicken Salad recipe is such an addicting spin from classic chicken salad. It is delicious, easy to make, and if I am being truthful, it might just be my favorite version of chicken salad! So, if you are a pickle lover like me then I highly recommend giving this recipe a try.
Ingredients
- 1/4 yellow onion, grated
- 4 cups cooked chicken, shredded
- 2 boiled eggs, grated
- 2 tablespoons pickle juice
- 1 tablespoon dill weed
- 1 ½ cup dill pickle, chopped
- Salt & Pepper to taste
- 1 cup mayonnaise
- 1 celery rib, finely diced
- 1 tablespoon mustard
How To Make Dill Pickle Chicken Salad
To start, you will need to do some prep work. So, start by chopping up the dill pickles, celery and grating the onion. Place them in a bowl and set aside. You will also need to boil two eggs. Make sure to cool the eggs prior to peeling them. Placing them in an ice water bath helps to remove the shell.
Next, you need to shred the chicken. If you don’t feel like boiling or cooking your own chicken, rotisserie chicken is a great option and adds to the simplicity of this recipe. Rotisserie chicken also has great flavor which is always a plus when it comes to food. Now, as you may know by now, I like making things as easy as possible. So, I like to shred my chicken using a hand mixer. You can shred the chicken in seconds with a hand mixer but if you prefer using a fork, go for it!
Once the chicken is shredded, add it to a large mixing bowl. Next, add 1 cup chopped pickles, diced celery, grated onion, grated boiled eggs, pickle juice, mayonnaise, mustard, salt, pepper, dill weed and stir until combined. Once combined, if it seems to dry for your preference, add more mayonnaise.
Transfer the chicken salad to your serving bowl. Then, sprinkle more dill weed on top, and add ½ cup chopped dill pickles on top as well. Serve & enjoy!

- Transfer to a serving bowl and sprinkle more dill weed on top, add ½ cup chopped dill pickles on top. Serve & enjoy!
