Mississippi Pot Roast

I’ll admit that when I first heard about Mississippi Pot Roast, I was a little hesitant due to not being able to imagine how ranch seasoning, au jus gravy, and pepperoncino peppers could combine to make a decent-tasting roast. Much less, the best roast I’ve ever eaten, but I am here to tell you that this recipe is AWESOME and is now the only way I will make a pot roast.  

So, if you are on the hunt for a true dump-and-forget crock pot meal that is super delicious then this Mississippi Pot Roast needs to be added to your list of go-to recipes. I like to add diced potatoes and baby carrots to the crockpot and allow everything to cook together because the juices and flavors from the roast make the potatoes and carrots downright delicious! 

To make this recipe you will start by placing the chuck roast in your crockpot and then season the top of the chuck roast with the package of ranch seasoning and a package of au jus gravy mix. Then place the pepperoncini peppers, onions, mushrooms, and butter on top of the roast. If you are adding diced potatoes and carrots, I suggest adding a little beef broth to the crockpot just to make sure there is enough liquid for everything to cook. But, if you’re not adding any carrots or potatoes, the roast will typically make enough juice to cook itself so just omit the beef broth if that’s the case. Lastly, you will need to place the lid on your crockpot and let the roast cook on low heat for 8 hours. Cooking the roast on low will make it super tender so make sure you don’t rush this step! Once it’s finished cooking you are ready to dig in, so I hope y’all enjoy this recipe! 

 

Mississippi Pot Roast

This Mississippi Pot Roast is true southern comfort food! This recipe features melt-in-your mouth beef chuck roast immersed in savory broth gravy, topped with sweet pepperoncini peppers, tangy ranch seasoning and a hint of butter.

Ingredients

  • 2 –3-pound chuck roast
  • 1 package ranch seasoning
  • 1 package au jus gravy mix
  • ½ cup butter 1 stick
  • 4-6 pepperoncini peppers
  • ½ medium yellow onion thinly sliced
  • 1 cup thinly sliced baby bella mushrooms
  • 2 cups beef broth if you are planning to add carrots & potatoes

Instructions

  • Place the chuck roast in your crockpot and season the top of the roast with the package of ranch seasoning and au jus gravy mix. Place pepperoncini peppers, onions, mushrooms and butter on top of the roast.
  • If you are adding potatoes and carrots to the crockpot, add beef broth as well. If you are only cooking the roast, then no additional liquid is necessary.
  • Place lid on the crockpot and cook on low heat for 8 hours.
  • Serve & Enjoy!

Notes

I like to add baby carrots and diced potatoes to the crockpot while the roast cooks which is why I like to add a little beef broth to the bottom of the crockpot to ensure there is enough liquid to cook it all and I like to have extra gravy to pour over the roast when serving.
