I have made several “potato skillet” style recipes which have all been delicious, and this Bang Bang Chicken & Potato Skillet is no exception. I love making this style of dish because it is seriously so easy to make and can function as an all-in-one meal. This recipe features crispy tender potatoes tossed with juicy chicken and drizzled with a sweet and zesty “bang bang” sauce.
The Sauce
I will start by saying the measurements for this sauce makes a decent amount and depending on how much sauce you prefer; you may find it most efficient to cut the recipe in half. The sauce is very simple to make, all you will need to do is add mayonnaise, sweet chili sauce, sriracha sauce, and honey to a mixing bowl and combine. I like to place the sauce back into the refrigerator while I am cooking the rest of the dish.
Prepare The Chicken & Potatoes
For convenience, I used storebought fresh pre-diced potatoes and onions, that you can find in the dairy section of the grocery store. However, if you prefer to dice your own, I recommend using russet potatoes. Once you dice the potatoes, place them in a colander and rinse them well with cold water to remove the excess starch. Then pat the potatoes with a paper towel and soak up all the excess water. Next, place the potatoes in the air fryer and drizzle 1 tablespoon of olive oil on top. Season the potatoes with seasoned salt and shake to combine. Cook them for 15-20 minutes at 400 degrees until they are tender but crispy. Also, make sure to “shake” the basket every 5 minutes to help them cook evenly.
Now, dice the chicken breast into bite-size pieces and set aside. In a skillet over medium-high heat, add 1 tablespoon of olive oil. Next, add the diced chicken and season with Cajun seasoning and onion powder. Stir to combine until every piece is evenly coated with seasoning. Cook until the chicken reaches an internal temperature of 165 degrees. Now, turn off the heat and leave the chicken in the skillet. Once the potatoes are finished cooking, add them to the skillet and drizzle as much or as little bang bang sauce as you desire. Now, stir to combine everything and enjoy this Bang Bang Chicken & Potatoe Skillet!

Instructions
