Prep work- Start by dicing the chicken breasts into small bite size pieces and preheat the air fryer to 400 degrees. If you don't plan to use store bought potatoes, dice the potatoes into bite size pieces, rinse them well and dry completely.
To prepare the sauce, add mayonnaise, sweet chili sauce, sriracha sauce and honey to a mixing bowl and combine. Set aside while preparing the rest of the dish.
Place the potatoes in the air fryer and drizzle 1 tablespoon of olive oil on top. Season the potatoes with seasoned salt and shake to combine. Cook for 15-20 minutes at 400 degrees until potatoes are tender but crispy. Make sure to “shake” the basket every 5 minutes to help them cook evenly.
In a skillet over medium high heat, add 1 tablespoon of olive oil. Add the diced chicken and season with Cajun seasoning and onion powder. Stir to combine until every piece is evenly coated with seasoning. Cook until chicken reaches internal temperature of 165 degrees. Turn off the heat and leave the chicken in the skillet.
Add the potatoes to the skillet. Drizzle on desired amount of sauce and toss to combine. Enjoy!
Notes
The sauce portion of the recipe makes a decent amount so if you are not really a “sauce” person then I recommend cutting that part of the recipe in half.
