This Crockpot Beef Tips & Gravy recipe is one of my family’s favorites. It always comes out so tender and the flavor is unmatched. I typically like making this recipe on Sunday when I tend to make more traditional southern style food for supper.
Ingredients
- 2-3 pounds chuck roast, diced into 1-inch pieces
- 2 tablespoon olive oil
- ½ teaspoon black pepper
- ½ tablespoon garlic powder
- ½ tablespoon onion powder
- 1 Au Jus gravy packet
- 1/2 Lipton onion soup mix packet
- 14.5 ounce can beef broth
- 10.5 ounce can beefy mushroom soup
- 1 tablespoon cornstarch
Prep Work
This recipe calls for very minimal prep work aside from a trip to the grocery store. So, if you are cutting your own chuck roast, dice it into 1-inch size pieces.
How To Make Crockpot Beef Tips & Gravy
To make Crockpot Beef Tips & Gravy start by adding the meat to a large mixing bowl. Then pour in 1 tablespoon of olive oil and season it with pepper, onion powder, and garlic powder. Next, toss the meat around using a set of tongs until every piece is coated in seasoning.
Then in a hot skillet over medium-high heat, add 1 tablespoon of olive oil. Add the meat piece by piece to the skillet. You may have to cook the meat in 2-3 batches to prevent overcrowding the skillet. Allow the meat to sear for 2-3 minutes on each side or until a golden-brown crust forms on each side.
In a large mixing bowl add the beef broth, beefy mushroom soup, ½ Lipton onion soup mix packet and Au Jus gravy packet then whisk until combined.
Next add the meat and gravy mixture to the crockpot and stir to combine. Cook on low for 6-8 hours or high for 3-4 hours. To thicken the gravy, add 1 tablespoon of cold water and 1 tablespoon of cornstarch to a small bowl and mix until it is dissolved. Add the cornstarch slurry to the crockpot and stir it in. Allow 5 minutes for the gravy to thicken. Then plate it up and enjoy! (I like to serve these Crockpot Beef Tips & Gravy over rice or mashed potatoes.)

- Can I use stew meat instead of cutting up a chuck roast?
Yes, but I highly recommend using a chuck roast because stew meat is not as tender.
- How can I reduce the sodium in this recipe?
You can replace the beef broth with low sodium beef broth or water and do not add any extra salt when seasoning the meat.
- What can I serve this with?
I typically serve this over white rice or mashed potatoes. This dish pairs well with any traditional southern style sides such as my Southern Style Mac-N-Cheese and Southern Style Candied Yams.
- Can I skip searing the meat before cooking it in the crockpot?
Yes, searing the meat just creates more flavor. I have made this recipe plenty of times without searing and it still comes out delicious.

What can I use inside of beefy mushroom soup?my daughter is allergic to mushrooms
Possibly cream of celery however I have not tried it as a substitute and I don’t know how it would effect the taste.

I made this recipe this past weekend and it was a great hit. It’s definitely a keeper. I do have one question. Is there a substitute to the Beefy Mushroom Soup that would be Gluten Free? My Daughter-In-Law has Gluten issues. It looks like everything else is fine. Thank you.

I would assume this would be ok but if I wanted to add a couple of other veggies like sliced onion & maybe a green pepper, I guess would be I’d need to adjust my liquid content amounts to compensate for the extra ingredients…or maybe just cut the cornstarch step to 1/2? Just curious. I’ll be making it tomorrow..I can taste it now! Thx
Depending on how many veggies you plan to add I would adjust it some. However, If all of your veggies are in the broth/water then you don’t need to add anymore because they will cook. Cornstarch is just to thicken the gravy so adjust as needed. More=thicker gravy
