Crockpot Beef Tips & Gravy

This Crockpot Beef Tips & Gravy recipe features perfectly seasoned bite sized chuck roast pieces, slow cooked until they are melt in your mouth tender and topped with a beefy mushroom gravy.

Ingredients

  • 2-3 pounds chuck roast diced into 1-inch pieces
  • 2 tablespoon olive oil
  • ½ teaspoon black pepper
  • ½ tablespoon garlic powder
  • ½ tablespoon onion powder
  • 1 Au Jus gravy packet
  • ½ Lipton onion soup mix packet
  • 14.5 ounce can beef broth
  • 10.5 ounce can beefy mushroom soup
  • 1 tablespoon cornstarch

Instructions

  • Add meat to a large mixing bowl. Pour in 1 tablespoon of olive oil and season with pepper, onion powder, and garlic powder. Toss the meat around until every piece is coated in seasoning.
  • In a hot skillet over medium-high heat, add 1 tablespoon of olive oil. Add the meat piece by piece to prevent overcrowding the skillet. Allow meat to sear for 2-3 minutes on each side or until a golden-brown crust forms on each side. (may have to cook in 2-3 batches depending on how much meat you have)
  • In a large mixing bowl add the beef broth, beefy mushroom soup, ½ packet of Lipton onion soup mix and Au Jus gravy packet then whisk until combined.
  • Add the meat and gravy mixture to the crockpot and stir to combine. Cook on low for 6-8 hours or high for 3-4 hours. In a small bowl add 1 tablespoon of cold water and 1 tablespoon of cornstarch and mix until dissolved. Add to the crockpot and stir. Allow to sit for 5 minutes to thicken. Serve over rice or mashed potatoes and enjoy!
