This Crockpot Beef Tips & Gravy recipe features perfectly seasoned bite sized chuck roast pieces, slow cooked until they are melt in your mouth tender and topped with a beefy mushroom gravy.
Add meat to a large mixing bowl. Pour in 1 tablespoon of olive oil and season with pepper, onion powder, and garlic powder. Toss the meat around until every piece is coated in seasoning.
In a hot skillet over medium-high heat, add 1 tablespoon of olive oil. Add the meat piece by piece to prevent overcrowding the skillet. Allow meat to sear for 2-3 minutes on each side or until a golden-brown crust forms on each side. (may have to cook in 2-3 batches depending on how much meat you have)
In a large mixing bowl add the beef broth, beefy mushroom soup, ½ packet of Lipton onion soup mix and Au Jus gravy packet then whisk until combined.
Add the meat and gravy mixture to the crockpot and stir to combine. Cook on low for 6-8 hours or high for 3-4 hours. In a small bowl add 1 tablespoon of cold water and 1 tablespoon of cornstarch and mix until dissolved. Add to the crockpot and stir. Allow to sit for 5 minutes to thicken. Serve over rice or mashed potatoes and enjoy!
