Quick & Easy Dinner

This Creamy Cajun Chicken & Rice is one of my go-to recipes after I come home from a busy day at work! This recipe can be made in less than 30 minutes, and it is simply delicious. I am not the type of person who enjoys a lot of “spice” but my husband LOVES it, and this dish satisfies us both.  

Making The Dish

This recipe starts with a small amount of prep work so, start by cooking the rice. I usually use minute rice just for convenience but feel free to use your favorite kind. You will need to cook the rice per the package instructions and based on the measurements of how many people you will be serving. Next, If the chicken breasts you are using are thick, slice them horizontally into two equal-size pieces. 

Now you will need to season the chicken breasts on both sides with Cajun seasoning, onion powder, garlic powder, and pepper. If you haven’t noticed I didn’t give any specific measurements on how much to use because everyone has different taste when it comes to spice tolerance. Therefore, use how much or how little seasonings you prefer. 

Next, in a hot skillet over medium-high heat, add the olive oil and the chicken breast. Let the chicken sear for 3-4 minutes before flipping. This will ensure that you get a nice crust on each side. The cooking time will vary based on thickness of the chicken breast, so I highly recommend using a meat thermometer. This will give peace of mind and ensure the chicken isn’t overcooked and dry. Once the internal temp reaches 165 degrees, the chicken is done. Remove the chicken from the skillet and set aside. 

With a paper towel soak up the excess olive oil from the skillet and add the butter. Let the butter melt and add heavy whipping cream. Stir to combine and season the mixture with Cajun seasoning, paprika, and pepper. Now, add in the parmesan cheese and stir continuously until it develops a creamy texture. Then turn off the heat and pour most of the sauce into a separate bowl. You will need to leave a small amount of sauce in the skillet for the rice. 

Once the rice is done cooking, add it to the skillet and season with Cajun seasoning and paprika. Stir to combine the rice and sauce that is left in the skillet.  Now, slice the chicken breasts into thin pieces and serve it over a bed of rice. Use the excess sauce to top everything off and you’re ready to enjoy this Creamy Cajun Chicken & Rice!

Ingredients

  • 2 boneless skinless chicken breasts thinly sliced
  • 1 ½ tablespoons olive oil
  • Cajun seasoning
  • Onion powder
  • Garlic Powder
  • Paprika
  • Pepper
  • 4 tablespoons butter
  • 1 cup parmesan cheese
  • 1 ½ cup heavy whipping cream
  • Cooked rice

Instructions

  • Add cooked rice to the skillet and season with Cajun seasoning and paprika. Combine the rice and sauce that is left in the skillet. Slice chicken breasts up into thin pieces. Serve the chicken over a bed of rice and top with as much sauce as desired. Enjoy!

    Loveeee! The only thing I did different was cook the rice in chicken broth (instead of water) and I cut the chicken into 1/2 inch cubes.

    I made this last night and like the simplicity of it. I mixed dark meat in along with it. My Cajun seasoning I used needed a bit more kick but my wife thought it was great. I used 2 T for the Cajun, 1 tsp for onion, garlic powders and a pinch of pepper. Might add cayenne next time or different Cajun seasoning.
