Crockpot French Onion Chicken & Potatoes

This Crockpot French Onion Chicken & Potatoes is the perfect savory one-pot meal! It is easy to make and only calls for a handful of ingredients, which makes it the perfect weeknight meal! Start by placing 3-4 boneless chicken breasts into the bottom of the crockpot. Then you will need to sprinkle one packet of French onion soup mix on top of the chicken breast. Next, add the sliced onions and diced potatoes to the crockpot and pour in the cans of French onion soup and beef broth. Make sure to cover the crockpot and cook this on low for 4-6 hours.  

Once the time is up and the chicken has finished cooking, remove the chicken breasts from the crockpot and transfer them to a large plate. Now you will need to take two forks and shred the chicken into smaller bite-size chunks. Once the chicken is shredded to your liking, transfer it back to the crockpot and top with mozzarella cheese. Then simply finish this dish off by covering it for an additional 15 minutes to allow the cheese to melt. You can serve this dish with vegetables or a side salad to make the perfect meal.

Ingredients

  • 3-4 boneless chicken breasts
  • 2 10.5- ounce cans of French onion soup
  • 1 packet of French onion soup mix
  • 1 yellow onion thinly sliced
  • 2-3 pounds of russet potatoes peeled and diced
  • 1 cup mozzarella cheese
  • 1 cup beef broth

Instructions

  • Place the chicken breast in the bottom of the crockpot and sprinkle one packet of French onion soup mix on top. Add the onions and potatoes. Pour in the French onion soup and beef broth.
  • Cover and cook on low for 4-6 hours.
  • Remove the chicken breasts and transfer to a large plate. Take two forks and shred the chicken. Transfer back to the crockpot and top with mozzarella cheese. Cover for 15-20 additional minutes to allow cheese to melt.
  • Serve & enjoy!
