This Crockpot French Onion Chicken & Potatoes is the perfect weeknight meal! This recipe features juicy chicken and tender potatoes cooked in a savory caramelized onion infused beef broth and topped off with mozzarella cheese.
Place the chicken breast in the bottom of the crockpot and sprinkle one packet of French onion soup mix on top. Add the onions and potatoes. Pour in the French onion soup and beef broth.
Cover and cook on low for 4-6 hours.
Remove the chicken breasts and transfer to a large plate. Take two forks and shred the chicken. Transfer back to the crockpot and top with mozzarella cheese. Cover for 15-20 additional minutes to allow cheese to melt.
