Preheat the oven to 350 degrees. In a large skillet over medium-high heat, add in the olive oil. Add the chicken and season with paprika, onion powder, garlic powder, salt and black pepper. Cook the chicken until internal temp reach 165 degrees (around 7-9 minutes).

In a 7×13 casserole dish, add the hashbrowns, cream of chicken soup, French onion dip (sour cream based), cooked chicken, and 1 cup of cheese then mix until well combined. Top with cheese and crispy fried onions.

Bake at 350 degrees, in a preheated oven, on the bottom rack for 30-40 minutes or until hashbrowns are fully cooked. Serve & enjoy!

Tip and Tricks for Delicious French Onion Chicken Casserole

 

  • Use Sour Cream Based Dip- This is a MUST. You can find it in the dairy section of most grocery stores. The French onion dip you find in the chip isle will not work for this recipe.
  • Use Thawed Hashbrowns- If you are using frozen hash browns, allow them to thaw and drain off any excess water.  
  • Bake On The Bottom Rack- To prevent burning the crispy fried onion topping, I recommend baking it in the bottom rack.
  • Shred You Cheese- For the ultimate creamy casserole, I recommend shredding your own cheese. Pre-shredded cheese will work but it contains anti-caking ingredients which prevent it from melting properly.
