Fudgy S’mores Brownies

Springtime is fast approaching and what better way to celebrate the upcoming warmer and longer days than with delicious Fudgy S’mores Brownies? These brownies remind me of the time spent outdoors around a cozy fire pit in the spring and summer months, but they are made in the comfort of your own kitchen!  

Homemade Brownie Batter 

For this recipe you can use store-bought brownie mix but if you have the ingredients on hand, I highly recommend following the full recipe. I have made several variations of homemade brownies over the years, but this recipe is by far my favorite. To make this recipe you want to start out by preheating your oven to 350 degrees and lining an 8×8 baking pan with parchment paper. Then in a large mixing bowl add the sugar, cocoa and melted butter. Stir this until well combined and it has formed a chocolatey “paste” 

Next, add eggs, vanilla extract and vegetable oil. Stir until well combined and no lumps are present in the batter. Then you will need to add the flour and stir to combine. Pour the batter into your baking dish and spread it out evenly. Bake at 350 degrees for 20-25 minutes until the batter reaches the “doneness” you prefer for your brownies. 

Once finished baking, remove the brownies from the oven and swap the heat setting to LOW broil. Top the brownies in this order: marshmallows, crushed graham cracker then chopped Hershey’s bar. Place the brownies back into the oven on the top rack and broil on LOW for 1-2 minutes until the marshmallows develop a slightly toasted appearance. Please do not step away from the oven during this step because the marshmallows burn very easily. I found that at the 1 minute 30 second mark, my marshmallows were perfectly toasted. Let these Fudgy Smore’s Brownies rest for 10 minutes and then cut them into squares. Enjoy with a cold glass of milk! 

Fudgy S’mores Brownies

This delicious homemade S’mores Brownie recipe features fudgy homemade brownies topped with toasted marshmallows, crushed graham crackers and chopped Hershey’s chocolate bar

Ingredients

  • ½ cup salted butter melted (1 stick)
  • ½ cup cocoa powder
  • 1 ½ cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • ½ cup all-purpose flour
  • 1 ½ tablespoon vegetable oil
  • 3 cups mini marshmallows
  • 1 Hershey’s bar roughly chopped
  • 5 graham crackers crushed

Instructions

  • Preheat oven to 350 degrees and line an 8x8 baking pan with parchment paper. In a large mixing bowl add sugar, cocoa and melted butter. Stir until well combined.
  • Add eggs, vanilla extract and vegetable oil. Stir until well combined and no lumps are present in the batter. Add the flour and stir to combine.
  • Pour the batter into an 8x8 baking dish and spread it out evenly. Bake at 350 degrees for 20-25 minutes until the batter reaches the “doneness” you prefer for your brownies.
  • Once finished baking, remove the brownies from the oven and swap the heat setting to LOW broil. Top the brownies in this order: marshmallows, crushed graham cracker, chopped Hershey’s bar. Notes

You can use box brownie mix for this recipe if you prefer.
Please set a timer when broiling. The marshmallows burn easily, and you don't want to walk away from the oven during this step. Every oven cooks differently but at the 1 minute 30 second mark my marshmallows were perfectly toasted so just keep a close eye out when doing this step.
