Fudgy S’mores Brownies

This delicious homemade S’mores Brownie recipe features fudgy homemade brownies topped with toasted marshmallows, crushed graham crackers and chopped Hershey’s chocolate bar

Ingredients

  • ½ cup salted butter melted (1 stick)
  • ½ cup cocoa powder
  • 1 ½ cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • ½ cup all-purpose flour
  • 1 ½ tablespoon vegetable oil
  • 3 cups mini marshmallows
  • 1 Hershey’s bar roughly chopped
  • 5 graham crackers crushed

Instructions

  • Preheat oven to 350 degrees and line an 8x8 baking pan with parchment paper. In a large mixing bowl add sugar, cocoa and melted butter. Stir until well combined.
  • Add eggs, vanilla extract and vegetable oil. Stir until well combined and no lumps are present in the batter. Add the flour and stir to combine.
  • Pour the batter into an 8x8 baking dish and spread it out evenly. Bake at 350 degrees for 20-25 minutes until the batter reaches the “doneness” you prefer for your brownies.
  • Once finished baking, remove the brownies from the oven and swap the heat setting to LOW broil. Top the brownies in this order: marshmallows, crushed graham cracker, chopped Hershey’s bar. Place the brownies back into the oven on the top rack and broil on LOW for 1-2 minutes until the marshmallows develop a slightly toasted appearance. Let rest for 10 minutes, cut into squares and enjoy!

Notes

You can use box brownie mix for this recipe if you prefer.
Please set a timer when broiling. The marshmallows burn easily, and you don't want to walk away from the oven during this step. Every oven cooks differently but at the 1 minute 30 second mark my marshmallows were perfectly toasted so just keep a close eye out when doing this step.
