One Pot Cajun Sausage & Rice

This One Pot Cajun Sausage & Rice is the perfect all-in-one 30-minute meal when you are looking to spice things up! This recipe is absolutely perfect for everyone and that is coming from someone who doesn’t do spicey food but married someone who does! So, if you are looking for a quick and fairly cheap meal that doesn’t have to be served with sides, check this recipe out! 

 

One Pot Cajun Sausage & Rice 

Prep Work 

 

I always like to prep everything before I start making this One Pot Cajun Sausage & Rice just to be more organized. So, start by slicing the sausage in ½ inch thick pieces. Then dice up the celery, bell peppers and onions. I also like to go ahead and measure out the rice and chicken broth too.   

 

Ingredients 

 

  • 1 pound of Cajun style smoked sausage, sliced in ½ inch pieces 
  • ½ cup of bell pepper 
  • ½ cup yellow onion, diced 
  • ½ cup celery, diced 
  • 1 tablespoon garlic, minced 
  • 1 tablespoon olive oil 
  • 2 cups chicken broth 
  • 1 cup white rice 
  • 15 ounces crushed tomatoes 
  • ½ teaspoon smoked paprika 
  • ½ teaspoon onion powder 
  • ½ teaspoon garlic powder 
  • 1 tablespoon Cajun seasoning 

 

How To Make Cajun Sausage & Rice 

 

In a large skillet over medium-high heat add the sausage and allow to cook for 1-2 minutes. Then, add the bell pepper, onion and celery. Allow the sausage to finish browning and vegetables to soften. If the sausage doesn’t produce much grease when cooking, add a little olive oil to the skillet to help the vegetables cook. This step should take 6-8 minutes. Once the sausage is finished browning, add the minced garlic and sauté for an additional 30 seconds or until fragrant.  

Then in the same skillet and without removing anything, add the chicken broth, crushed tomatoes and rice. Next, season with Cajun seasoning, onion powder, garlic powder, and smoked paprika. Give it a nice stir to combine everything and then cover the skillet with a lid. Bring the mixture to a simmer and then reduce the heat to low. Allow the rice to cook per the package instructions. This usually takes around 15-20 minutes and make sure to stir it occasionally while cooking. Once the rice is finished cooking, remove the lid and allow it to cool for 10 minutes. What kind of sausage do you use? 

  • Any Cajun style sausage will do but if you are in sweet home Alabama, like me, then I recommend you use Cajun Smoked Sausage by Conecuh. If you haven’t tried Conecuh brand sausage, you don’t know what you are missing! 

How does this differ from Jambalaya? 

  • It is very similar, but I have only ever had jambalaya that had at least two meats in the recipe.  

Is this recipe spicey? 

  • It depends on the Cajun seasoning you use. I use Slap Ya Mama original blend and it tastes just right for me; I usually don’t like spicey dishes. 

What can I serve this with? 

  • This meal is an all-in-one meal. I typically don’t serve anything with it expect a big ole glass of sweet tea.

Bring to a simmer and reduce the heat to low. Allow the rice to cook per the package instructions, stirring occasionally. Serve & enjoy!
