This One Pot Cajun Sausage & Rice is a simple 30-minute meal that features Cajun style sausage, sautéed vegetables, and rice packed with Cajun style flavor!
1poundof Cajun style smoked sausagesliced in ½ inch pieces
½cupof bell pepper
½cupyellow oniondiced
½cupcelerydiced
1tablespoongarlicminced
1tablespoonolive oil
2cupschicken broth
1cupwhite rice
15ouncescrushed tomatoes
½teaspoonsmoked paprika
½teaspoononion powder
½teaspoongarlic powder
1tablespoonCajun seasoning
Instructions
In a large skillet over medium-high heat add the sausage. Allow to cook for 1-2 minutes then add the bell pepper, onion and celery. Allow the sausage to finish browning and vegetables to soften. Then add the minced garlic and sauté for 30 seconds or until fragrant (If the sausage doesn't produce much grease, add a little olive oil to the skillet to help the vegetables cook)
Add the chicken broth, crushed tomatoes and rice. Season with Cajun seasoning, onion powder, garlic powder, and smoked paprika. Stir to combine and cover with a lid. Bring to a simmer and reduce the heat to low. Allow the rice to cook per the package instructions, stirring occasionally. Serve & enjoy!
