Ingredients
- 1 packet of Stove Top Stuffing- Cornbread flavor
- 1 cup water
- 2 pounds ground beef
- 2 eggs
- ½ cup chopped yellow onion
- 1 packet of onion soup mix
- ¾ cup ketchup
- ¾ cup BBQ sauce
- ¼ cup brown sugar
Instructions
- Start by preheating your oven to 350 degrees. Next, in a bowl add packet of Stove Top Stuffing, add water, combine and allow to sit for 5-10 minutes to absorb.
- Once water is absorbed into stuffing mix, add ground beef, crack eggs into bowl, add chopped onions, packet of onion soup mix, ¼ cup ketchup, ¼ cup BBQ sauce. Combine well.
- Add to large casserole dish and form into a loaf.
- Bake at 350 degrees for 60 minutes.
- While the meatloaf is baking prepare the glaze. In a small bowl, add brown sugar, ½ cup ketchup, ½ cup BBQ sauce, stirring to combine.
- At the 60-minute mark, remove the meatloaf from the oven and apply the glaze, place meatloaf back into oven and continue cooking for an additional 10-15 minutes.
- Drain excess grease from bottom of casserole dish.
- Let rest for 15 minutes, slice and serve. Enjoy!
Notes
• I highly recommend using lean meat for this recipe. It will help cut down on all the excess grease.
• 2-3 slices of bread, broken into small pieces and soaked in a splash of milk, will work as a substitute for the stuffing mix. Although, I do recommend using stuffing mix for the extra flavor.
• You may be wondering why I use a casserole dish versus a loaf pan, and it's just because using a casserole dish will give the meatloaf a nice crust.

I made the meatloaf last night basically for my wife as I am not big on it. Now I’m new at cooking recipes. But yours are so easy to follow even mine came out good. My wife loved it and I ended up a serving myself! Would definitely fix it again. I do need help on making the loaf. I’d be embarrassed to show you that. Thanks again for the recipe!
Full of flavor! Wonderful recipe. One suggestion though, when writing the ingredients put “divided” following the ketchup and the bbq sauce.
