This Bacon Cheeseburger Tortellini features delicious ground chuck, chopped bacon, sauteed onions, minced garlic and diced tomatoes combined with cheesy tortellini in a creamy cheese sauce.
1.Bring a large pot of water to boil and cook the tortellini per the package instructions, drain and set aside (a small drop of olive oil will prevent pasta from sticking). In a large skillet over medium-high heat cook the slices of bacon until crispy then let them slightly cool and chop into pieces, set aside. In the same skillet add the onions and let them sauté for 2-3 minutes, add minced garlic and cook for 30-45 seconds until fragrant. Add the ground beef and cook until you see no visible signs of pink within the meat.
Drain all the grease from the meat and place it back into the skillet. Add heavy whipping cream, 2 cups of cheese, chopped bacon, tomatoes then stir to combine. Over low heat, allow it to come to a simmer and stir until the cheese has melted. Add the tortellini and stir to combine.
Sprinkle 1 cup of cheese on top and garnish with any leftover bacon. Cover and allow to simmer on low heat until cheese has melted. Allow it to cool for 10 minutes then enjoy!
