Cheesy Dorito Taco Casserole

Ingredients

  • 2 pounds ground beef
  • ½ yellow onion diced
  • 1 tablespoon minced garlic
  • 1 packet taco seasoning
  • 1 10 ounce can of Rotel undrained
  • 1 11 ounce can of Mexicorn drained
  • 2 cups “taco blend” cheese shredded
  • 1 9.25 ounce bag of Nacho Cheese Doritos crushed
  • Optional toppings- Sour Cream Pico De Gallo

Instructions

  • Preheat oven to 350 degrees. In a large skillet over medium-high heat, add the ground beef and onions. Cook until no pink is visible within the meat. Add the minced garlic and allow it to cook for 30-45 seconds then drain off any excess grease.
  • Season the meat with a packet of taco seasoning, add a can of Rotel and Mexicorn and stir until well combined.
  • In a 7x11 casserole dish, place a single layer of meat mixture in the bottom followed by a layer of cheese and a layer of crushed Doritos. Repeat this step once to complete the casserole.
  • Bake at 350 degrees for 15-20 minutes until the cheese is melted. Serve topped with fresh Pico De Gallo and sour cream. Enjoy!
