Cowboy Butter Steak & Potato Skillet

Ingredients

  • 3 Ribeye Steaks diced
  • 2 Large Russett Potatoes peeled and diced
  • 2 tablespoons Olive Oil
  • 2 tablespoons Seasoned Salt
  • 2 tablespoons Montreal Steak Seasoning

Cowboy Butter

  • ½ cup Butter softened
  • 1 tablespoons Dijon Mustard
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Paprika
  • 1 teaspoon Crushed Red Peppers
  • Salt & Black Pepper to taste
  • 3 tablespoons Chopped Green Onions
  • 1 teaspoon Lemon Juice

Instructions

  • Preheat the air fryer to 400 degrees. Rinse the diced potatoes with cold water to wash off excess starch and then pat the dry with a paper towel. Once they are dry, add them to a large mixing bowl and drizzle olive oil on top followed by seasoning with seasoned salt. Toss the potatoes around until they are coated with seasoning. Cook them in the air fryer at 400 degrees for around 15-20 minutes until they are soft on the inside with a slight crisp on the outside.
  • In a large skillet over medium-high heat add some olive oil and add the steak bites, season them with Montreal steak seasoning and cook to your liking. While the steak is cooking add slightly melted butter to a bowl along with Dijon mustard, minced garlic, paprika, lemon juice, crushed red peppers, salt, black pepper and chives. Stir until well combined and set to the side.
  • Pour the potatoes into the skillet and combine with the potatoes. Drizzle on the cowboy butter or use it as a dipping sauce. Serve & enjoy!
