Rinse off the freshly diced potatoes well to remove excess starch and then pat dry with a towel. Once dry, add them into a mixing bowl and add in olive oil and seasoned salt. Toss until seasoning and oil is evenly distributed. Cook them in an air fryer at 400 degrees for 20 minutes, tossing occasionally.
Into a large skillet over medium-high heat add the diced chicken and season with Cajun seasoning, garlic powder, onion powder and paprika. Cook 7-8 minutes until chicken reaches an internal temp of 165 degrees. Remove from the skillet and set heat to low.
Add butter and allow to melt. Once melted, add in heavy whipping cream and parmesan cheese. Stir until it comes to a simmer and cheese is fully melted. Sprinkle in a pinch of paprika and Cajun seasoning and stir to combine.
Pour potatoes and chicken into skillet them toss until they are coated with the sauce. Serve & enjoy!
