Crockpot Chicken Pot Pie Soup

Ingredients

  • 3 Large Boneless Skinless Chicken Breasts
  • ½ Yellow Onion chopped
  • 5 Celery Stalks chopped
  • 1 ½ cups Carrots chopped
  • 2 Russet Potatoes peeled and diced
  • 15 ounces Whole Kernal Corn drained
  • 15 ounces Sweet Peas drained
  • 4 cups Chicken Broth
  • 1 tablespoon Chicken Boullion Powder
  • 1 teaspoons Garlic Powder
  • 1 teaspoons Onion Powder
  • Salt & Black Pepper to taste
  • ½ cup Heavy Whipping Cream

Cornstarch Slurry

  • 2-3 tablespoons Cornstarch
  • 2-3 tablespoons Cold water

Instructions

  • Add the chicken breasts, diced onions, carrots, celery, potatoes, drained corn, drained sweet peas, and chicken broth to the crockpot. Season with chicken Boullion powder, garlic powder, onion powder, salt and black pepper then stir to combine. Cook on low for 5-6 hours or high for 3-4 hours.
  • Remove chicken from the crockpot and dice into small pieces. Return it to the crockpot along with the heavy whipping cream. Add in the cornstarch slurry and stir to thicken the soup. Serve & enjoy!
