Feta Corn Casserole

Ingredients

  • ½ cup Butter melted
  • 1/4 cup All-Purpose Flour
  • ¼ cup Granulated Sugar
  • 2 Eggs
  • 1 cup Whole Milk
  • 1 15 ounce Can of Whole Kernal Corn drained
  • 1 15 ounce Can of Cream Style Corn
  • ½ cup Athenos Feta Crumbles
  • Salt & Black Pepper to taste

Topping Ingredients

  • 1 Sleeve Ritz Crackers crushed
  • 4 tablespoons Butter melted
  • ½ cups Athenos Feta Crumbles

Instructions

  • Into a large mixing bowl add ½ cup melted butter, and ¼ cup all-purpose flour. Whisk until well combined then add in ¼ granulated sugar and whisk to combine. Add in 2 eggs and 1 cup of whole milk and whisk to combine
  • Add can of drained whole kernel corn, can of cream style corn and ½ cup Athenos Feta Crumbles. Season with salt and black pepper to taste and stir together until well combined.
  • Transfer to baking dish and bake on the bottom rack at 375 degrees for 50 minutes. While its baking, add crushed sleeve of crackers and 4 tablespoons melted butter to a bowl and mix to incorporate. At the 50-minute mark, remove the casserole and top with cracker topping. Bake for an additional 10 minutes on the top rack or until topping is golden brown. Allow it to rest for 10 minutes, then serve & enjoy!
