Preheat the air fryer to 400 degrees. Start by cutting chicken into 2-inch size pieces and placing the pieces into a bowl. Measure the skewer to make sure it fits into your air fryer, cut in half if necessary. Also, if you are using wooden skewers soak them in water for 15 minutes prior to prevent burning the stick.
Add olive oil and stir chicken around to coat each piece with oil. Season with 1 teaspoon of lemon pepper seasoning, ½ teaspoon of paprika, 1 teaspoon of garlic powder and 1 teaspoon of onion powder. Stir chicken until every piece is coated with the seasoning.
Place the butter into a microwave-safe bowl and heat in the microwave for 30 seconds. Add ½ teaspoon lemon pepper seasoning, ½ teaspoon of honey, ¼ teaspoon parsley, a pinch of fresh lemon zest, and 1 teaspoon of fresh lemon juice. Stir until well combined and set aside.
Thread 7-8 pieces of chicken onto each skewer and cook in the air fryer at 400 degrees for 6-8 minutes then flip and cook for an additional 6-8 minutes until the internal temp reaches 165 degrees. Transfer to a plate and baste with lemon pepper sauce. Let the chicken cool slightly and enjoy!
